Couscous Salad

This is a delicious way to make couscous and is a healthier alternative to pasta salads or the like.

Ingredients:

2 Cups cooked couscous (follow the cooking instructions as per the box)
Handfull choped baby tomatoes
Half a chopped red pepper
Half a chopped green pepper
Half a chopped red onion
Finely chopped celery stalk
Feta cheese cut into small squares
Olive oil
Balsamic Vinegar
Salt and Pepper

How:

Cook the couscous as per the instructions. Transfer to a large bowl. Add all the choppped ingredients and dress with olive oil and balsamic vinegar.
